TUSCAN CHICKEN PASTA

At TPHS, we’re all about living well, and this means eating well. Today, we are sharing our much loved Tuscan Chicken Pasta recipe. Creamy, flavoursome and simple to make, this recipe is perfect for a family dinner, date night and even meal prep! We’re not going to waste your time with a bunch of cooking hoo-ha, so let’s get right into it!

Total prep & cook time: +/- 40 minutes

Serves: 4-6 people

Here’s what you’ll need:

  • 4 chicken breasts (approx 800g)

  • +/- 400g penne pasta (or pasta of choice)

  • half a yellow onion

  • 2 tablespoons garlic

  • 240g sundried tomatoes (we use Ina Paarman’s)

  • 2 cups spinach leaves

  • 250ml cream

  • 1/4 cup parmesan cheese

  • olive oil to cook

*note: we recommend using a large pan for this recipe as the pasta will be added to the pan in the end.


The method:

  1. Start by bringing water to a boil and adding a drizzle of olive oil and a pinch of salt, before adding in your pasta to begin cooking (the pasta will take approx. 8-10 minutes to cook)

  2. While your pasta is cooking, you are going to cook your chicken breasts. Cut them up into small-medium sized cubes and season them with paprika, salt & pepper. Place a pan on medium to high heat, and add some olive oil and a tablespoon of garlic before chucking in your chicken cubes - once the chicken is cooked through, and has a nice golden-brown colour to it, remove it from the pan and set aside.

  3. To your same pan, add another tablespoon of garlic and extra olive oil if needed. To this you will add your chopped yellow onion. Let the onion cook for about 5 minutes or so until golden in colour.

  4. Next, chop up your sundried tomatoes into smaller pieces before adding them into the pan with the onions. Let them cook for a few minutes before adding your cream and half the parmesan cheese.

  5. Let the sauce simmer for approx. 5-8 minutes. Then add in your spinach and allow it to wilt - your sauce should thicken and become deep-orange in colour.

  6. Add your chicken back into the pan and mix it in with the sauce, Allow a few minutes on medium heat for the chicken to heat up again.

  7. Lastly, add the remainder of the parmesan cheese, along with the cooked pasta, and toss it all together until the chicken and the pasta is evenly coated.

  8. Serve with parmesan cheese on top, with bread, or on it’s own - it’s good either way ;)
